Fourth of July – Blueberry Ice Cream

We had a great turn out in Pinehurst after the Parade on July 4th.  The blueberries sold well but the free ice cream samples were the hit of the day!  We found the recipe on Leigh Anne Wilkes blog  https://www.yourhomebasedmom.com/

It is pretty simple and  super refreshing on these hot summer days!  Our good friends who helped plant the bushes 4 years ago, helped serve up two gallons of ice cream.  We hope you got a chance to sample the ice cream and picked up two extra pints to make some ice cream for your own family.  The recipe is:

4 Cups Fairway Farm Blueberries
2 Cups Sugar
1 Tablespoon Vanilla
2 Cups Heavy Whipping Cream
1 Cup Whole Milk
1 Cup 1/2 and 1/2.

(Note:  Leigh Anne’s recipe called for lemon juice which I omitted).  We used our Cuisinart 2 Quart ice cream maker (for reference).

Puree the blueberries and sugar in blender or food processor, transfer to saucepan and heat until sugar melts.  Refrigerate until chilled.

Combine, whipping cream, whole milk, half and half and vanilla in 8 cup measuring cup or large bowl.  Gradually incorporate blueberries.  Transfer to ice cream maker and churn to desired consistency.  (I put my ice cream in a freezer container and allow to freeze completely).
