Blueberry Salsa Recipe

We had tremendous response to our Blueberry Salsa samples today at the Sandhills Farmer’s Market in Pinehurst.  The combination of sweet blueberries, savory red onion and a little kick from the peppers really makes for a refreshing salsa.  This is perfect for snacking with chips or as a tasty accompaniment to fish or chicken.

Our goal is to provide samples each week that show how versatile blueberries really are!  We have a sweet surprise in store for the Farmer’s Market on the 4th of July.  When our commercial kitchen is finished, we will be able to sell some of the more popular items at our booth.

Blueberry Salsa
(makes about 2 1/2 cups)

1 Cup fresh Fairway Farm blueberries coarsely chopped
1/2 Cup fresh Fairway Farm blueberries whole
1/3 Cup green pepper chopped
1/3 Cup red onion chopped
1/2 Jalapeno pepper, seeds removed chopped (add a whole pepper if you like it spicy)
1/3 Cup lime juice
1/2 Teaspoon salt
Combine all ingredients and mix well.  Chill before serving.
